Bison Pot Stickers

INGREDIENTS:
Filling:
- 1lb ground bison
- 1 baby bok choy, diced
- 6 water chestnuts, diced
- 2 green onions, thinly sliced
- 2 garlic cloves, minced
- 2 teaspoons minced fresh ginger
- 1 teaspoon sesame oil
- 2 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 1 egg, lightly beaten
Assembly:
- 1 egg, lightly beaten
- 20-30 wonton wrappers
- 4 tbsp vegetable oil, divided
STEPS FOR COOKING:
- Place all the filling ingredients in a bowl and mix together well
- Set filling ingredients bowl aside for later
- Brush edges of a wonton wrapper with beaten egg and fill the centre with 1 tablespoon of bison filling
- Place the filled and open wonton wrapper onto your fingers and fold the wrapper in half
- Only seal the corner of one side and then crimp the edges together
- Carefully pinch the corner closed and then press around the entire edge until it’s fully sealed
- Set finished ones aside and continue until all the filling and wrappers have been used up
- Heat a large frying pan on medium and add 2 tablespoons of oil
- Add 4-6 pot stickers to pan and pan-fry for 2 to 4 minutes
- Add 2-3 tablespoons of water to the pan and cover for 2-3 minutes
